TEPACHE - Ease yourself into the fermented food realm

Want to get into fermented food but are a little worried about taking the leap? Tepache could be your answer!

What is Tepache?

Tepache is a fermented beverage made from fresh pineapple skin, some brown sugar and spices! Yup thats is all you need, easy huh! It has been enjoyed for generations in Mexico and now it’s your turn to try this lovely refreshing drink.

What you will need:

Yield - 4-6 servings

  • Outer peel of 1 pineapple (eat the rest of the pineapple or refrigerate it for another use)

  • Filtered Water

  • 200g of panela or brown sugar

  • 1 cinnamon stick

  • 3 or 4 whole cloves and/or star anise

    Process

  1. Place the pineapple peels in a 2 to 4 L mason jar or ceramic container or a pickling jar. Add filtered water to the vesel to cover the peels.

  2. Dissolve the Panela or brown sugar in 250ml lukewarm water and pout it into the container

  3. Add the cinnamon and cloves. Stir. Cover with a clean cloth, kitchen town, paper towel or coffee filter paper and secure it with a rubber band. Write the brewing date on a piece of masking tape and stick it ot the outside of the container.

  4. Let it sit at room temperature for 3 to 5 days.

  5. Try tasting on day 3. The warmer the room the quicker it will ferment. When it starts tasting less sweet and more tart, it is done!

  6. Pour the tepache through a strainer into a jar of bottles with airtight lids. Refrigerate and serve cold.
